What does it mean for you to “eat healthy”?
I consider myself very conscious. I transitioned to a mainly plant-based approach to my diet a while ago, based on environmental and health reasons. It brought a constant re-learning to my life as I am discovering what natural ingredients and plants can offer us as food. I was dairy-free for years before the pivot but still, cutting out lean meat needs you to educate yourself on plant proteins and learn a new way around the kitchen. Good news: nothing goes bad in our fridge anymore. 😀 Plus, once you become competent in macronutrients and learn how to build your meals from vegetables, grains, nuts and seed to meet your daily nutrient needs, you’re fine!
Eating healthy to me means eating regularly, of good quality, eating just enough and mainly plants.
